Some of the best recipes are the ones that are versatile, require few ingredients and are easy to make. This fruit muffin recipe, sent in by Gabrielle Byrd of Annapolis, gets points for meeting all three criteria. Gabrielle says you can use whatever kind of fruit (fresh or frozen) you have on hand. Most of the other ingredients are pantry staples so it's likely you already have what you need to make these muffins today. Gabrielle also said the recipe is easy enough for her 10-year-old daughter, Abby, to make on her own. We used frozen blueberries in ours and they were delicious.
Fruit of the Day Muffins
Makes one dozen
1-3/4 cup of flour
1/2 cup sugar
2-1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
3/4 cup milk
1/3 vegetable oil
1 egg
3/4 to 1 cup of fresh or frozen fruit (such as blueberries, bananas, apples or strawberries)
Preheat oven to 400 degrees. Stir together flour, sugar, baking powder, salt and cinnamon. In another bowl, combine milk, oil and egg. Add the wet mixture to the dry. Stir until moist. Add in the fruit and stir gently.
Spoon into lined muffin cups 3/4 full. Bake approximately 20 minutes.
