Peanut Butter Cookies

This cookie recipe features ingredients you probably have in your pantry and refrigerator (it only needs one egg). It's easy to make when you're in the mood to bake, for a last-minute gift or as a nice gesture for someone special.

Maddy White and Mary Virginia Kizer Ball made these easy cookies for Maddy's mom, Rebecca, because she loves peanut butter. They were so easy that Mary Virginia made them again for the holidays and added a chocolate kiss. They modified the original recipe that appeared on cooks.com.

Peanut Butter Cookies

Makes about three dozen

1-1/2 cups all-purpose flour
1/2 teaspoon baking soda
pinch of salt
1/2 cup butter
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup light brown sugar
1 egg, beaten
1 teaspoon vanilla
chocolate kisses, optional

Preheat oven to 350 degrees. Mix flour, baking soda and salt. In a large separate bowl, cream together butter and peanut butter and gradually add sugars. Add egg and stir in vanilla. Add flour mixture and stir only until mixed.

Drop spoonfuls onto a greased baking sheet and press a criss-cross pattern onto the top using a fork dipped in flour. Bake in preheated oven at 350 degrees for 8 minutes. Cookies may appear soft in the middle but do not over-bake. To add chocolate kisses, press into cookies immediately after removing them from the oven.
