Sorry Lea, but a true southern Maryland stuffed ham is made with a corned ham. The stuffing is spicy and contains red pepper and many spices along with the Kale and onions. After stuffing the ham, it is wrapped in cheesecloth, and then a pillowcase, and boiled OUTSIDE for many, many hours. If cooked indoors the odor from the kale gets in to the drapes, carpets and furniture. While your version sounds delicious, it is not true to the region, but reads like a watered down version. Visit St Mary's county and pick some up at a grocery store deli the next holiday and you will see and taste the difference. The county fair also serves up the authentic version. I suggest you make it to the next fair, get a stuffed ham sandwich and see(and taste) for yourself.
